Learn from local chefs and experts about choosing and cooking with the wonderful food
and wine from the Puglia region of Italy. Each day you will focus on a different topic:
wild vegetables, aromatic herbs, salads, rice and cereals, sauces and colours with
vegetable combinations. Fish, bread, pasta and flours, desserts and jams - and all of
course with accompanying wines. Visits to local markets and cantinas.
Choose it, cook it, eat it!

The true essence of our cooking is to transform what we feel and see in a dish. The
fragrance, the colours and the look of the food is what makes tasting a unique experience,
involving all our senses. You will be introduced to the use of the very local food sources,
wild plants that belong to the territory and are exclusive to the Mediterranean and long
forgotten. In a creative way and with simple techniques a great array of vegetables fish
cereals and of course wines will be ready at your fingertips to make your own dishes.
